Every year my family and I always go to the potatoe field and pick potatoes. Canning has never been a passion for me but the love I have for my mom, make me do wonders. I think now that I have gotten older, I'm beginning to take interest in knowing more about how my ancestors made end meets and how they had to really earn their way. The Bible even say for "if any would not work, neither should he eat." I think sometimes we misconsture the meaning of the word and think that you must have a paying job in order to eat. Everybody may not be able to work a 9-5 job but they might be able to work in a field or get out and hustle. Sometimes it takes getting back to our old roots to have a good meal the next day.
So the best way to cann Sweet Potatoes without peeling.
Wash Sweet Potatoes
Put Potatoes in pot as many as it can hold or you can carry
Let potatoes cook until come to a good boil
Once potatoes are tender enough to stick a folk through, pour water off to stop cooking and you can handle easly. Take one potatoe at a time and pull hull off. You save more potatoes this way and also time. Chop potatoes as big as you want, bag then freeze. Depending on how much you cann, repeat process and you wil have enough food for a rainy day.
